no indication that message was encrypted / ability to revert and encrypt the message

There seems to be no way to see that a message was encrypted and
decrypted.
Also, it would be great to revert the decryption to protect a

Hey Darcy,
please excuse the slow response.
By now you are likely using OS X 10.10.4 and GPG Suite 2015.06 (stable). Do you not see the security indicator, when you receive an encrypted message as shown here?
You should see a closed lock indicating that you are viewing an encrypted message.
Regarding your question about re-encrypting the message: it is encrypted as soon as you leave it. It is only temporarily decrypted as you view it. To better understand what is going on, you might want to refer to our KB-article about Passphrase management. The important part is, if you do not store your passphrase in the OS X keychain and set the caching to a very low timing, you will be asked for your passphrase and if you do not enter that, your mail will not be decrypted.
