<p>What exactly are you trying to achieve ? If you are sending
encrypted emails you are already using symmetric key. If you want
to specify what symetric keys to use by default then you will have
to pick the ones you want via the "algorithm preferences"
(Key>algorithm preferences)</p>

<p>symmetric encryption broke with the 10.10 update of mail.app.
When we implemented symmetric encryption it was pretty much a quick
hack and never fully implemented. For now we've decided to no
longer support symmetric encryption, so it would be best to disable
that feature by following these steps:</p>
<ul>
<li>close mail.app</li>
<li>open Terminal.app</li>
<li>paste <code>defaults write org.gpgtools.gpgmail
AllowSymmetricEncryption -bool NO</code></li>
</ul>
<p>If you need symmetric encryption for your work, you can fallback
on GPGServices for those purposes.</p>
